Hi angels! I’m back with yet another savory recipe for you. My mom and I created this one together and it was so delicious! It’s a classic Mediterranean sauce with cucumber noodles. Trust me, i’m 100% italian, so if you like italian food and care about your health, this is the perfect recipe for you!
Lately i’ve been posting only savory dishes because i’ve been eating mainly fruit monomeals and every now and then i prepare something different like this, also because as i wrote in the last post my mom has recently started eating raw as well and i want her to try all the amazing possibilities that raw food offers! ✨
Anyway let’s get started with this recipe! The ingredients that we used to make this are:
- 4 cucumbers
- 10 cherry tomatoes
- ¾ red bell pepper
- a handful of fresh basil
- 1 clove of garlic
- ½ red onion of Tropea
- 1 tsp dried oregano
- 2 tbsp nutritional yeast
- a handful of (desalted) capers
- a pinch of dried “diavoletto” (or little devil) chili pepper
Some of these ingredients, such as the red onion of Tropea and the “diavoletto” chili pepper are typically italian but you can replace them with any kind of red onion and chili or cayenne pepper.
First we need to create the spaghetti by spiralizing the cucumber, then place them in a bowl and put that aside. Now all we need to do is to blend together all the other ingredients and we’ll have our delicious sauce! Pour it on the cucumbers and mix well. Chop up a couple tomatoes and add them to your plate, along with a few leaves of basil to give it a nice touch. ✨
My mom is still in a transitioning phase so she also added a pinch of pink Himalayan salt, a bit of extra virgin olive oil, and a few olives to her plate.
I don’t use those ingredients but this dish was still epic! 😍
This is the result! We had this for dinner yesterday evening and honestly i can’t wait to make this again. It was so fragrant, flavorful, and spicy. I love spicy food! 🌶️

Two days ago i went to a meet up with other raw vegan and vegan people here in Rome and the atmosphere was so magical and beautiful! We met in a gorgeous park with majestic big trees, we chilled in the sun, and Daniela and I prepared raw food for everyone! We made four different types of zucchini and cucumber noodles: noodles with ragù (or “rawgù” as we like to call it lol), noodles with raw green hummus, noodles with creamy tomato sauce, and simple noodles marinated with lemon, lime, and herbs. Daniela also brought two extremely delicious raw vegan pies! She’s the best, she’s taught me so many things about making raw vegan food and i still have so much more to learn! The atmosphere was so beautiful and we shared so much positivity! It was a wonderful day. I went there with my dad, who is an “omnivore”, and his dog Prevert, which is the sweetest dog ever and i love him dearly! My dad and I hadn’t spent a beautiful day together in ages and i’m so happy that he agreed to come along. And oh he loved the food! I am so so happy and grateful to have met such amazing people, to have made new friends, and to have had the opportunity to have such an amazing experience! 💘
