Simple Raw Vegan Pad Thai ๐Ÿ‹๐Ÿฅ’๐ŸŒฟ

Hi angels! Sorry for going m.i.a. lately, as i’ve already said plenty of times this period has been really intense for me, but if you follow me on instagram (@giulia.engel) i still post daily about my food and lifestyle!ย โœจ

Today i made some delicious, crispy, flavorful and beautiful raw vegan pad thai for me and my mom! She started eating raw too! It’s been almost a whole month and she’s been feeling amazing. She lost some weight and she’s solving her health problems. Nothing too serious as she’s already been vegan for almost 10 years, but she still had some minor health issues that couldn’t be overlooked. I am so happy for her because we all want to see our mamas shine, be healthy, radiant, and happy! She is glowing right now and i feel so grateful to have such an awesome, beautiful looking, cool, and open minded mom! She’s the best i could ever wish for!ย ๐Ÿ’•

This pad thai looks amazing right? Let’s get started then! The ingredients that i used to create this dish are:

  • 4 medium sized cucumbers
  • 4 medium sized carrots
  • 3 heirloom tomatoes
  • the juice of one lemon
  • 1 clove of garlic
  • 1 tbsp ground ginger
  • 1 tsp nutmeg
  • 1 tbsp coconut oil
  • a handful of fresh basil, mint, rosemary, parsley
  • a handful of capers
  • 1 spring onion

This recipe is super easy! Firstly we need to create our noodles (coodles?? lol) by spiralizing the cucumbers, or with the help of a potato peeler. Then with a potato peeler we are going to create stripes out of carrots. I didn’t spiralize them because they weren’t thick enough. Put the carrots and the cucumbers in a bowl. Now squeeze a lemon and pour the juice on the noodles. Add ginger, nutmeg, coconut oil, capers (desalt first by rinsing them), and the herbs. Crush the garlic clove, add that to the noodles and mix well with your hands. Chop up the tomatoes and the spring onion and add them to the noodles. Mix it all in and let that marinate for 10 minutes.

This is the result! A flavorful, spicy, fragrant, aromatic, crispy, savory dish that will fill you up and still make you feel light, energized, amazing and grateful to be alive!ย ๐Ÿ’–

My mom and I loved this dish! It’s easy and quick to prepare, very delicious, fresh, summery, beautiful to look at, healthy and alive!ย ๐ŸŒธ

Live food makes you feel alive!

Lately i’ve also started working out and doing yoga every morning. I can’t describe how great i feel. The Spring and the forthcoming Summer awakened a new energy within me! I feel alive, full of energy, joyful but also calm, still, peaceful. Even though everything around me is moving fast and i have lots of stuff to do, even though life sets difficult and stressful situations in front of me i am facing every obstacle and every setback with calmness, tranquility, and peace of mind.ย ๐Ÿ‘ผ

I found my center, my stillness. I am happy and grateful, always, everyday. Not a single day goes by without me waking up and thanking the Universe for another blissful day. I show thankfulness every moment that i can: when i wake up, right after my yoga session, before every meal, after (or during) sunbathing – i do it everyday, Sun is the most powerful medicine and it’s fundamental for our mental and physical well-being.ย ๐ŸŒž

Showing thankfulness attracts abundance and positivity into your life. Take 1 minute everyday to show gratefulness to the Universe. This will not only change your life and your reality, but it will also contribute to creating a better world by radiating positive loving vibrations into the Universe.ย ๐Ÿ’—
