Sorry for not being very active lately but, as you might now if you follow me on instagram, i’m going through a very intense period with university: i have an exam every week til the end of July. Pretty crazy, i know, but i really want to hurry up and get my degree as soon as possible so i can move on and focus on more interesting and exciting projects! ✨

Since today is Sunday i figured i could spend a little time preparing something more complex. Lately i’ve been eating pretty much only fruit, most of the times monomealing, eating fruitΒ as it is, or making very simple smoothies. With all the new summer fruit i’m just very happy and satisfied with eating lots of sweet, juicy fruit. In fact, i just ate 5 delicious nectarines! I love all kinds of peaches and nectarines are probably my favorite. I’m so happy they’re in season again! Also eating this way makes me feel so good. Simplicity is what the body prefers and fruit is what makes it thrive best!Β πŸŽπŸŒπŸ‰

But enough chitchat, let’s get to the point! Today i prepared this incredibly delicious and gorgeous dish: zoodles with a spicy, fragrant, refreshing, creamy sauce! This is, as usual, very simple to make. The ingredients i used are:

  • 4 medium sized zucchini
  • 1 ripe avocado
  • lemon zest
  • the juice of one lemon
  • 2 tsp of ginger
  • a handful of basil
  • a handful of mint
  • ΒΌ clove of garlic
  • black pepper
  • summer savory (optional)
  • wild aromatic herb (i think it’s pepperwort)

I gotΒ the aromatic herbs (savory and pepperwort) from my grandma’s garden but you can replace them with whatever other type of herbs you prefer! I got the lemons from her as well, that’s why i used the zest (they’re 100% organic).

To make this, the first thing that we need to do is spiralize the zucchini to create the noodles, or you can simply use a potato peeler. Once you’ve done that, place the zoodles in a bowl and put it aside. Now we need to create the sauce by blending together: the avocado, the lemon zest and juice, the ginger, the basil, the mint, and the garlic. I don’t love the flavor of raw garlic as it is very strong but a very small piece can add that extra pungent and spicy kick! If you like garlic you can use more, but be careful because it may cover the other ingredients’ flavor. Pour the sauce onto the zucchini and mix everything together with your hands. Lick your fingers (lol joking, but i actually did itΒ because that sauce was the bomb πŸ™ˆ). Finally add the fresh herbs on top and enjoy! 🍝

Looks pretty epic right? Words can’t describe how flavorful this was! This recipeΒ is the proof that you don’t need unhealthy ingredients and not even salt or oil to make a savory, tasty dish! People think that eating healthy means eating bland food that tastes of nothing, but truth is that Nature provides us with all kinds of flavors! Herbs and spices are magical ingredients: they make the flavor! And savory dishes aside, take fruit for example: fruit doesn’t need any kind of condiment because it tastes amazing and every fruit has a unique flavor! Nowadays we are so addicted to fake flavors and processed foods that we can’t even appreciate the true taste of Nature.

I always say this: eating raw is not a diet (it isn’t for me at least, i’m not doing this to lose weight) it is a lifestyle. It is a way to reconnect with Nature by respecting its laws. We are meant to eat fruit and some raw vegetables.Β πŸ“πŸ’πŸ‘

Getting in touch with Nature brings us happiness and peace of mind. The root to all suffering and sorrow in our modern society is the our detachment and estrangement from Nature. Nothing in our lives is natural anymore, starting from the way we eat!

When we detach from Nature we are detaching from the Supreme Universal Energy, but we can find our way back! Reconnect with your deep Self: start eating respecting all living beings and in a natural way, detox from negativity and toxicity (both physical and spiritual), find 10 minutes everyday to meditate and be present in the now, take care of yourself, say something nice to the people around you, try to always focus on the bright side, spend time in Nature, appreciate everything you have and be grateful for it. When you reconnect with your Self, you’re reconnecting to the Universe. These simple things may sound pointless or silly but they will actually have a huge impact not only on the people around you, but on this whole world and in the Universe. Everything we do, say, or think is energy that radiates vibrations that affect our reality. We have the power to change our reality. Make an effort and you can finally create your own happiness.Β πŸ’–

These recipes are for me just an excuse to talk about spirituality, because i discovered my true spiritual power only after i started eating raw (high vibrational food). I know that people are much more interested in the healthy aspect of this, but taking care of your self is actually a fundamental starting point. Eating raw food allows you to be in charge of your own health (there are countless stories on the internet about people healing from any sort of diseases and illnesses thanks to a raw diet) and taking care of your own health is a huge act of Self-Love, which is the most important thing that we can do for ourselves and for this world.Β πŸ’—

We can’t health the world if we don’t heal ourselves first. 🌷
