Happy mother’s day everyone! 💝🌺
My mom came back home while i was preparing this for lunch and she said “what did you prepare? It smells as if you’ve cooked something and it smells so good! I want to try whatever you’re making.” I shared some of my zoodles with her and she loved them!
I called these cheezy avocado zoodles #1 because i plan on making another similar but slightly different version and of course they taste nothing like cheese (i don’t even remember what it tastes like… it’s been more that 6 years since i last ate it!) but they’re very creamy, savory, and flavorful!
The ingredients i used are:
- 3 round zucchini
- 1 avocado (pinkerton)
- 2 tsp of ground turmeric
- 1 tsp of curry powder
- ½ garlic clove
- 2 tbsp nutritional yeast
- the juice of one lemon
- black pepper to taste
First we need to create the noodles by using a spiralizer, if you don’t have one i suggest using regular zucchini instead of round ones and create stripes with a potato peeler. Place the zoodles in a bowl and put it aside. Now let’s make the sauce by blending together all the other ingredients plus the leftover pieces from the zucchini. Pour the sauce onto the noodles and massage it in with your hands. This might seem messy but if you use forks you won’t be able to mix the sauce in as well as with your hands and it’s also more fun!
Ta-da! The cheezy noodles are ready to be served and enjoyed!
How gorgeous does this look? The sauce was so good that i started eating it straight out of the blender and this dish was so delicious and fragrant that words can’t even express it properly!
Avocado is my favorite ingredient to make dressings for my raw vegan pasta dishes and it’s a much healthier and cheaper option compared to nuts. I once tried to make a cheesy dressing with cashews but it didn’t taste as good and it made me feel heavy afterwards. I am used to eating very clean and the amount of nuts that it takes to make a recipe like this is just too much for me, to people who eat a standard diet it wouldn’t have the same effect i guess. Avocado is rich in healthy fats that our body will really appreciate and will be able to fully absorb. 🥑💕
Thank you Universe & Thank you Mother Nature for this and for everything. Today is mother’s day and the mother of each and every one of us is our Earth, Gaia. I love you Gaia and i swear i will try every day to improve myself and to respect you in every possible way. Forgive us for mistreating you, disrespecting you, ignoring you, destroying you. Humankind is at a loss but i’m confident we will soon find our way to the Truth and we will finally truly reconnect with our mother Earth and Nature. I pray for this everyday and everyday i am grateful for each ray of sunshine that reaches my skin, for every cloud, for every drop of water that hits the ground, for every green leaf, for every tree, for every fruit, for every inch of dirt, for every animal that inhabits this spectacular planet that too often gets forgotten. Yes, that’s what happened to us. We’ve forgotten how beautiful the Earth is, hiding behind these grey buildings and black streets, we’ve forgotten how incredible the colors of Nature are. Please remember who you are. You are not whatever your name is, you don’t have to wake up every morning to do the same thing you do everyday, you don’t have to be what other people and what society wants you to be. You are infinite Love and power. We are children of the Universe. Gaia is our Mother, the Sun is our Father, and all the living creatures that surround us are our brothers and sisters. Let’s respect each other, love each other, and live in harmony. Isn’t that what every human soul deeply desires? Don’t we all want peace, love, happiness? Well, we can only find that if we look inside our Self and and start unconditionally loving ourselves and those around us. Only through love we can evolve. 🙏🌷💖
Last but absolutely not least i want to thank my mother. My mother is the best person i know and even though sometimes she really gets on my nerves or stresses me out i know that she is the one person and the first person to ever show me unconditional, infinite love. I am here because of her and i am who i am because of her. She has taught me so much and i am so glad that our souls chose to share the experience of life on Earth. We are evolving together and even if we’re on different paths, as every one of us is, we’re holding hands and we support each other through every obstacle.

P.S. as it turns out not only the recipe, but this entire post is cheesy as hell lol sorry about that but i really felt like writing down these thoughts and put out some loving positive energy! ☮️
