Veggie Platter with spicy Avocado dip🌱


Yesterday i opened my fridge looking for something to make for lunch and i only had leftovers vegetables from my previous recipes so i decided to make a beautiful vegetable platter. This is super easy, simple, tasty, and crunchy! You can use whatever veggies you prefer. In my fridge i had:

  • mushrooms
  • celery
  • carrots
  • red bell peppers
  • cherry tomatoes
  • fava beans
  • Β½ avocado

All i did was cut up my vegetables and marinate the mushrooms with lemon juiceΒ for 10-15 minutes. Then i created an amazingly delicious avocado dip using:

  • Β½ avocado
  • 1 tbsp sunflower seeds
  • 2Β tsp ground ginger
  • 1 tsp curry
  • 1 tbsp nutritional yeast
  • a few leaves of parsley
  • the lemon juiceΒ that i had used to marinate the mushroom

Just blend these ingredients together and you have an amazing dip for your veggies. You can use this as a salad dressing as well. It doesn’t get easier that this!


This is a perfect idea for a lunch, a dinner, or even for a snack. It’s easy, it’s quick, it’s colorful, fresh and alive! 🌞🌹

I often hear people say that eating raw is complicated and that you need more time and specific tools to prepare your meals but this couldn’t be further from the truth! One of the aspects that i love most about this lifestyle is how quick and simple it is! Raw vegan bloggers and youtubers often show “complex” recipes (but they’re not really complex if you compare them to the traditional way of cooking to be entirely honest) because we try to show people that you can create whatever you want with raw food, so that transitioning from a standard diet to a raw food diet might look easier andΒ more appealing to others, but the truth is that you don’t need anything to eat raw. You can simply eat fruit and veggies as they are without even cutting them. You don’t need dressings, and you don’t necessarily need a blender, a spiralizer, or whatever. This is the easiest and most time saving way to eat! Don’t be fooled by our dish presentations and all of that. Even when i create “complex” dishes, it actually takes me no more than 10 minutes to prepare them.

For example today i went to university and for lunch i brought with me 6 apples and 2 celery stalks as a snack. I came home and i ate a couple bananas, a handful of raisins, some hazelnuts and some almonds. For dinner i had 3 bananas (sorry i love bananas way too much lol πŸŒπŸ™ˆ) and, after a while, 1 cut up bell pepper, and that was it. I feel nourished and energized and the only tool i used today was a knife. I don’t eat zoodles and complex smoothies everyday. I do that just because i love creating dishes and i love taking pics of them to share with the world. However raw veganism is about simplicity, frugality, that’s why it makes you feel more connected to Nature, and that’s what our bodies prefer. 🌻

Eating raw is simple, and if you want to try it, don’t be afraid to do it. You can do it, because that’s our nature. Nature is never difficult or complicated, Nature is always perfectly simple.Β πŸ’˜πŸŒ
