Creamy zoodles with fava beans pesto & spinach πŸ’š


Hi everyone! I’m back with another pretty epic recipe. I’m really enjoying zucchini noodles lately and today i put together a very springy, fresh, and savory dish. Fava beans are a very popular and traditional food to eat during this time of the year here in Italy so i wanted to incorporate them in one of my recipes. Β This one is very rich but don’t worry, it’s super easy as always! The ingredients you’re gonna need are:

  • 4 medium sized zucchini
  • 1 ripe avocado
  • the juice of one lemon
  • a splash of celery juice
  • a handful of fresh fava beans
  • a handful of basil
  • 1tbsp nutritional yeast
  • a few leaves of parsley
  • 1 tsp of capers
  • a handful of baby spinach
  • a pinch of black pepper

Firstly we need to create the zucchini noodles with a spiralizer or with a potato peeler, place them in a bowl and put that aside. Now let’s create the fava beans pesto by putting in the blender the avocado, the basil, the fava beans (i use only the core because the skin has a bitter taste), the celery juice, the lemon juice, the parsley, and the nutritional yeast. Blend them up and pour the sauceΒ over the zoodles, then mix all together by massaging the sauce in with your hands, finally add the baby spinach and keep mixing well. Sprinkle some black pepper on top; rinse thoroughly the capers to remove the salt and add them on top of your dish together with some more fava beans. 🌱


This dish literally tastes like Spring: it’s refreshing, fragrant, flavorsome, colorful, savory.Β I love the taste of fresh herbs combined with the creaminess of the avocado and the fava beans add that pungent taste that make this dish really delicious and fresh! ✨

I’m still looking for a new name for my blog before buying the domain but i only seem to come up with cheesy names. Help! If you have any suggestions please let me know in the comments! I want something that conveys the idea that this blog is about raw vegan food but also about spirituality and such. Does that make sense? The only good names i came up with were obviously already taken. Oh well, i guess i’ll come up with something better and for now i’m just happy to be able to share my lifestyle and my point of view with anyone who is interested to peek in.
