Yes, more zoodles! I’m sorry but i just love them.

I had three zucchini left in the fridge so this morning i figured i’d prepare something new just to share it with you! On my way to the fruit market i met a cute little cat who unfortunately had no ears and half of his nose was missing too. As i saw him my heart shrank. He came close to me as if he was looking for someone to pet him and i immediately felt the need to help him. I called my dad to help me get him to a veterinarian, so he came with his car and i took the cat in my arms. Unfortunately, as we put him in the back of our car he ran away. I looked for him but i couldn’t find him anymore. At least i tried and i hope the next person who saw him managed to help him. Sorry for the sad intro but it breaks my heart to see suffering animals. πŸ’”

Back to business. If you like strong flavors and fresh herbs you’re gonna love this recipe! These are the ingredients that i used to make this tasty meal:

  • 3 medium sized zucchini
  • 1 ripe avocado
  • a handful of basil
  • a handful of parsley
  • 3 tbsp of hemp seeds
  • 1 tbsp of spirulina powder
  • 1 celery stalk
  • 1 tsp of thyme
  • 2 tsp of oregano
  • 1 clove of garlic
  • 2 tbsp of nutritional yeast
  • ΒΌ of an apple
  • the juice of one lemon
  • a pinch of black pepper

This is my raw vegan version of a salsa verde and it’s basically an health bomb for your body! It’s delicious, creamy, strong, fragrant and filling! You can add some salt in there if you want and you can use whatever spice you prefer.

To prepare this dish you know the drill. Just spiralize your zucchini and create some beautiful noodles. Put in a blender all the other ingredients and blend them together to make the sauce. Pour on the noodles and mix well. Sprinkle with some freshly chopped parsley on top and lunch is ready! Super easy right?

Lots of people think that eating healthy requires lots of time and lots of money, but eating raw can actually be time and money saving, as long as you keep it simple and simplicity is always the best choice! I put together this lunch in like five minutes and the satisfaction of eating an healthy and delicious meal that is actually good for your mind and soul is priceless. πŸ™πŸ’•
