It’s possible to celebrate Easter in a compassionate and peaceful way. Unfortunately, here in Italy lamb is the traditional dish of this holiday and i don’t understand why we celebrate such a beautiful day that is about spring, rebirth, awakening, and life with such an awful tradition that involves the slaughtering of puppies. Lambs, and sheep in general, are kind, docile, sweet, pure, that’s why they are the symbol of innocence and harmlessness. Are we really so estranged from our deepest emotions to take advantage of that? I think humankind can do much better than that. We have an infinite potential as we contain the energy and force of the Universe within us. We have the power to release infinite, unconditional Love from our hearts and that’s what we all should aim to do in our small, short lives. Let’s start by respecting all our fellow humans, putting judgment aside and welcoming acceptance, and by protecting all our fellow living creatures of this planet.

Now, let’s get down to work to prepare a deliciously satisfying Easter Sunday lunch! I prepared one main dish and two desserts to share with my family. πŸ’˜

Curry & Lemon zoodles πŸ‹

This is my original recipe and today i made it for the first time, so i’m very excited about this one! It was simply epic! It was spicy, fragrant, delicious and filling. It’s a very simple recipe but it’s extremely flavorful as well. The ingredients you’re going to need are:

  • 4 medium sized zucchini
  • 1 ripe avocado
  • 1 tbsp curry powder
  • 1 tbsp ground ginger
  • 1 tsp turmeric
  • the zest of one lemon
  • the juice of one lemon
  • the juice of half orange
  • 1 tbsp nutritional yeast

All you need to do is to make the zucchini noodles with a spiralizer or a potato peeler, place them in a bowl and put it aside. Create the sauce by putting all the other ingredients in a blender and blend them up. Sprinkle with some freshly chopped parsley and it’s done! You can put more or less of those spices depending on how much spicy you like your food. It was my first time using curry, since it’s not a very italian spice, but i love it so much and the lemon zest gave this sauce a really nice kick! This was a full 10 and i’m so proud of it! βœ¨

Strawberry Nice-cream πŸ“

Then i prepared a classic banana and strawberry nice cream. This is a super easy recipe that everyone will love! The only thing you need to do is to freeze some bananas and some strawberries, then blend them when they’re still frozen (wait at least 10 minutest before blending them, so that they get a little softer and won’t break your blender). Et voilΓ ! Super simple right? You can add on top whatever you desire, i used some blueberries, and hazelnut crumble. Simply delicious! πŸ’•

Chocolaty date balls πŸ«

Last but not least, another simple recipe (yes everything is simple and easy here lol) that will make your taste buds go to heaven. You’re gonna need 3 simple ingredients:

  • 250 gr dates (medjool would be best, but whatever kind is fine)
  • 100 gr hazelnuts
  • 4 tbsp carob powder or raw cocoa powder
  • 1 tsp coconut oil (optional)

Just put these ingredients in a food processor and mix them until they reach a nice dough consistency. I left it a bit chunky because i like it better that way, but that’s up to you. 😊 I’d recommend soaking your hazelnuts overnight and if your dates are not very soft and a bit dry soak them in warm water for approximately 20-30 minutes. Once you have obtained your desired consistency create small balls by taking a spoonful of the mixture and rolling it between your hands. After that sprinkle them with shredded coconut. Place them in the fridge for at least 30 mins/ 1 hour. These little sweet balls are the perfect guilt-free (and cruelty free) sweet treat! Everyone in my family loved them! πŸ’—
