Spicy sweet & sour apple “rice” 🍎✨

These were supposed to be apple noodles but when i was mixing in the sauce i broke the noodles and i completely messed up the dish presentation lol so i figured i would call this a raw vegan “rice” since it looks more like a risotto. However, chit chat aside, this dish was really good! It’s similar to a marinara sauce but i gave it a little twist by adding some sweetness to it. The ingredients needed for this recipe are:

  • 2 medium sized apples
  • Β½ red bell pepper
  • 8 cherry tomatoes
  • 4 sun-dried tomatoes
  • Β½ avocado (or a whole one, depending on how creamy you want it)
  • a handful of basil
  • 1 tsp of ground cayenne pepper
  • nutritional yeast (optional)

Start by creating apple noodles with a spiralizer, place them in a bowl and put them aside. Put in the blender the leftover pieces of apple with the rest of the ingredients and blend them all together. Pour it on the noodles and, if you want it to look more like rice you can mix it in with forks or you can simply cut the noodles with scissors, otherwise if you wish to keep the noodles intact you should massage the sauce in with your hands (why haven’t i done this?! oh well… πŸ™ˆ lol).

What i love most about raw food is that it has wonderful colors and shapes and even just by looking at fresh fruit and veggies i feel happy and grateful to live on such a beautiful planet that offers us so many delightful things. Too bad we are used to disrespecting Earth, Nature and all its lovely creatures. Eating raw is part of the revolution we need. It’s a way to respect Nature and get closer to it. 🌱
