Zoodles with avocado pesto πŸ’šπŸŒ±

Eating raw is not just about eating Β sweet fruit, you can actually create incredible savory dishes as well! This recipe is one of my favorites and it’s perfect for this time of the year when it starts to be sunny and hot. This dish is refreshing, flavorsome, fragrant, filling and it’s super quick and easy to prepare! ✨

Ingredients:
β€’ 4 zucchini
β€’ 1 ripe avocado
β€’ a handful of basil
β€’ 2tbsp of nutritional yeast
β€’ the juice of one lemon

The firstΒ thing you need to do is to create some beautiful noodles with the zucchini using a spiralizer (i use Lurch Spirali and you can find it here) or simply a potato peeler, place them in a bowl and put them aside. Then throw in the blender all the other ingredients and the pieces fromΒ the leftover zucchini. Personally i don’t use salt because i don’t love salty food, but if you wish you can add some. I recommend using unrefined salt, or even better you could use celery salt, which is a much healthier option. BlendΒ all the ingredientsΒ together, then pour over the zucchini and mix well. Et voilΓ , it’s done!
I think this would be enough for 2 people but i actually ate it all by myself lol. πŸ™ˆ

This is the proof that raw vegan recipesΒ are not as complicated as they may seem and you can actually make a great main dish that is simple but also delicious, healthy, full of nutrients and vitamins with only a few ingredients and in less than 10 minutes!
